15 mins sardine linguine

The strongest typhoon is approaching today so I thought I may just make myself a quick lunch while there is still ☀️

A while ago I bought some frozen sardines, look pretty fresh. 

I first quickly marinate the sardines with extra virgin olive oil and balsamic vinegar for 20 mins. Cook the pasta to al denta and drain. 



Retain some of that water in a pot, add chopped tomatoes (I prefer canned ones...quick and tasty), let it boil and reduce. Put in the sardines, let it simmer for a few minutes. 



Remove the sardines (unless you want to break them up), add the pasta to the pot and stir. Let the pasta absorb all the juice and goodies! Yummy yummy.  Lastly I added some homegrown basil....best thing is it's free!!

Duck Confit with red wine reduction sauce

Duck confit
Simple dinner I made last week. 
Slow cooked for 90 mins at 65degrees and quickly seared afterwards on a pan and with a torch. 
Made a quick red wine reduction with shallots and chicken stock. Literally I could have made an orange sauce.
